Mullu Thenguzhal(CHAKLI)




Ingredients:

Rice Four                                                  1 1/2 cups
Gram dhal flour (besan)                            1/2 cup
Unsalted Butter                                         1/4 cup(@ room temp)
Sesame seeds                                            1 tablespoons
salt                                                            1 tsp
oil for frying

Method:

Mix all the ingredients into a pliable dough.(Use the correct amount of water to make the dough)  This measurement will approximately require about 1 cup.  Add the water slowly as you mix it.  Fill the dough into the murukku press with the star plate inserted.




 If you are not bothered about the shape u can directly press into the oil.  Else make it into small spirals on the back of a plate.  Remember to press the end of the spiral into the previous round  so that it does not break when you lift it.   Then lift it one by one and drop into oil. Fry till golden brown.  Remove and place on tissue paper to remove excess oil.


Tip:  Never change the heat setting while the snack is frying in the oil. According to my trial keeping the dial on 7 throughout will be the right heat.  Try to make this recipe when you have the least disturbances.  When one set fries in the oil try to get the next set on the plate ready.  Do it in smaller quantities so that the dough does not dry out.  keep it covered. Each 454 gm bar of butter has about 32 tbsp of butter or two cups. draw lines with your knife to cut out 1/2 or 1/4 of the bar.You can always reduce your quantity of butter from the recipe but never increase since it will make your snacks crumble.  Here is  chart for u to measure butter .

Yet Another Tastier version


Viewers from India have the option of grinding their own murukku mix from the flour mill.  The following ingredient combination will also give u a tasty murukku. Here in US and canada we don't get moong dhal flour so I haven't used in my recipe.  Try this one too....


Ingredients:

Rice flour               2 cups
Besan                    1/2 cup
Moong dhal flour   1/2cup
Salt
Sesame seeds
Butter                    2 tbsp
Oil for frying

Adai--Lentil Pancakes
